Can you take a port offline while the san is running to replace cables with no ill effect????

When you down a port, all sessions to that port will get terminated and the initiator will have to come back to the group IP and re-login. Different OS's react differently to that. I wouldn't anticipate problems, if you're doing more than one cable. Swap it and wait a few minutes before doing the next one.
