Would you use Apple server SW if you could run it as a VM?

Another post in The Server Room that I thought was interesting had to do with Apple servers. A number of the people commenting said the biggest issue was the lack of 24/7/365 support from Apple. I don't think this had anything to do with the news this week about Psystar and their plans to sell Mac clone systems, but it occurred to me that if Psystar prevails with its business plan, licensing for Apple Xserve software could change significantly.
